This week we had a lot of guests over and a lot of okra, so I made this easy oven roasted okra two days in a row, and several okra haters were coverted into okra fans!
Okra (can cut stems off if you want, or just roast whole!)
Any other spices you like
Preheat oven to 400 F
Toss okra with all other ingredients and spread in a single layer on a cookie sheet
Roast for 30-40 minutes, until okra is soft and underside turns dark
Optional: broil on high for a couple minutes to crisp the tops
If you don’t cut the tops off and line your pan with aluminum foil to speed up cleanup, this is a super easy way to cook a lot of okra with barely any effort!
